Kids, #1 is around four months old right now. 11 pounds and growing well. Today is mommy’s first Mother’s Day. So, I just want to list a bunch of things that she has done for you.
- Just last morning, she took care of a severe blowout situation due to daddy’s incompetence of changing your diaper in the middle of the night. It was not tight enough.
- There are endless amounts of times that mommy has woken up to breastfeed you.
- There are endless amounts of times that mommy has breastfed you during the day.
- Milk pumping happened every four hours.
- Bottle washing happened twice a day.
- Clothes washing happened at least twice a week.
- Carrying you for hours each day.
- Changing your diaper probably every 2ish hours.
- Getting spit up on multiple times a day.
- Consoling you when you were crying/wailing.
- Extra excitement with tummy time and exercises.
- Long walks with Emi.
- Etc.
You may be thinking where’s daddy? But, today isn’t about me.
I cannot express enough gratitude to your mother. I hope she accepts my humble offering of a lemon blueberry cake.
Here is the recipe.
- I followed the recipe to a T. Shocking, right? Uncle Butters supervised.
- I learned how to fold a cone shape so that I can line the pan with parchment.
- I think that I could have tempered the sour cream mix better by adding the hot buttter slower and mixing it.
- I used two 8-inch pans. So, the cake was thicker. It took 10-15 minutes extra to get it to bake all the way.
- Mommy said to rotate the pan midway through so that it bakes more evenly.
- Honestly, the frosting turned out to be the hard part. I don’t know what consistency the cream cheese should have. But, I think that it was too soft. So, my frosting turned out really soft. So, I refrigerated it and it became stiff again.
